Lola's Strawberry Bread - Gluten Free


Strawberry Bread

3 1/4 cups gluten free flour mix
1 1/2 teaspoons xanthan gum
1 teaspoon soda
1 teaspoon cinnamon
1 1/2 cups sugar
1 teaspoon salt
~2 1/2 cups strawberries (20 oz. frozen container, add liquid too)
1 1/4 cup oil
4 eggs 
1 teaspoon red food coloring (I used half that and it didn't quite do the trick...I usually don't use any)

Mix.  Bake in 2 loaf pans or 1 bundt pan.  350 degrees for 1 hour.



I would also like to make this Strawberry Salad!  That is why I am posting it...because I don't want to lose the recipe.
