2 cups + 2 Tablespoons gluten free flour mix
1/2 teaspoon xanthan gum
2 tablespoons packed brown sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 egg
2 cups coconut milk
1/2 cup mashed sweet potatoes
2 tablespoons melted butter
Mix, cook on griddle, enjoy with applesauce and peanut butter!
